Quick & Easy Fish Taco Bowls

Well, I hope your Sunday is a bit more productive than mine! It's been a whirlwind week of working six days in a row and toting around the toddler, so I'm taking time to breathe today and reevaluate my life (for real!) I've spent the last two weeks running to Walmart every. single. day. because I haven't got around to meal planning since that's just who I am as a person. *sigh*

We had a rough start to the day after I was obligated to leave in the middle of church as Ella was a terror in both the nursery and the sanctuary. Needless to say, we had a lot of time this morning to run to the store and grab some food (successfully avoiding frozen chicken nuggets for the second time this week. Yay!)


I have a handful of go-to meals that I can remember on hand. If you're a regular here, you'll know that I absolutely hate cooking, so the fact that I'm sharing a recipe is beyond crazy at this point in life. But even lazy moms have to cook, am I right? It's easy to make. It's yummy. It's cheap. It's relatively hearty and healthy. What else can a tired mom wish for?

P.S. It's toddler approved (if they don't get distracted by bubbles.) 
P.P.S. Make sure to discuss fish with your toddler. The first time I gave Ella fish, she started crying because she thought I cooked our beta, Toodles, for supper. ^-^

Quick And Easy Fish "Tacos"

Yield: Serves 3-4

Ingredients:

4-6 Tilapia Fillets
1 cup White Rice
1/2 tsp Chili Powder
1/2 tsp Cumin
1/4 tsp Salt
1/4 tsp Pepper
Dash of Garlic Powder
Toppings: cilantro, corn, black beans, tomatoes, cheese, shredded cabbage, avocado, etc.


Instructions:


  • {1} Cook your rice according to directions on box or bag. While the rice is cooking, combine all the seasonings in a small bowl and sprinkle evenly over both sides of the fish fillets.
  • {2} Coat a broiling pan with a little bit of butter or olive oil and place your fish on top. Broil on Hi until fish begins to flake (about 8-10 minutes.)
  • {3} Layer the rice, fish, and toppings and sprinkle cilantro on top. Enjoy!

  • (Extra Bonus: the picky husband liked it, too!)
